I took this straight from The Paleo Recipe Book
Ingredients:
- 1 Fresh Bell Pepper
- 2-5 Whole Cage Free Organic Eggs
- 1-2 tbsp of Organic Unrefined Coconut Oil
- 1-2 Cups of Fresh Spinach
- Mrs. Dash Salt Free Seasoning (any flavor)
- Chopped Mushrooms (optional)
- Fresh Salsa (optional)
- Fresh Guacamole (optional)
Cooking Steps:
- Spread coconut oil into pan
- Crack open your eggs and throw into the pan – cook on MED/HIGH Heat
- Throw fresh spinach and chopped mushrooms on top of eggs
- Scramble mixture together
- Cut and hollow out your bell peppers
- Once eggs are cooked, stuff into peppers
- Top with what ever you want! I personally do a little bit of salsa, fresh guac, and Mrs. Dash Salt Free Seasoning
- EAT and ENJOY!
