You gotta try this Paleo recipe…


I took this straight from The Paleo Recipe Book


  • 1 Fresh Bell Pepper
  • 2-5 Whole Cage Free Organic Eggs
  • 1-2 tbsp of Organic Unrefined Coconut Oil
  • 1-2 Cups of Fresh Spinach
  • Mrs. Dash Salt Free Seasoning (any flavor)
  • Chopped Mushrooms (optional)
  • Fresh Salsa (optional)
  • Fresh Guacamole (optional)

Cooking Steps:

  1. Spread coconut oil into pan
  2. Crack open your eggs and throw into the pan – cook on MED/HIGH Heat
  3. Throw fresh spinach and chopped mushrooms on top of eggs
  4. Scramble mixture together
  5. Cut and hollow out your bell peppers
  6. Once eggs are cooked, stuff into peppers
  7. Top with what ever you want!  I personally do a little bit of salsa, fresh guac, and Mrs. Dash Salt Free Seasoning
  8. EAT and ENJOY!
